Summer Fun: Fresh Fruit Wine Coolers

Summer relaxation has a style all its own. Seasonal fruits that taste this sweet for only a few short months, and long days and late sunsets that lend themselves to leisurely conversation will be only a memory when autumn arrives. Celebrate summer with this fresh fruit wine cooler that embodies all of its charms.

You can tailor this drink to almost any fresh fruit you have handy with a little experimentation. This version calls for peaches, which are available tree-ripened in most regions during July and August. It’s a sweet and simple recipe that can be made by the pitcherful, perfect for a laid back summer afternoon and pretty enough for entertaining.

You’ll need one cup each of bottled or fresh peach juice and dry white wine, three cups seltzer, two tablespoons of honey, and some pitted and peeled sliced peaches. Combine the seltzer and peach juice in a pitcher. In a cup, stir the honey into the wine, and then add to the pitcher and stir. To serve, fill glasses with alternating layers of ice and peaches, and add the seltzer mixture. Filling the glasses with ice, rather than the pitcher, prevents mixture from becoming watered down.

Salmon is a well known group of fish species found in the both the Atlantic and Pacific ocean, and also the great lakes of North America. One of the salmon’s famous traits is it’s long distance migration from rivers to oceans and then back again to the rivers to lay eggs. There are many types of salmon, these include the Atlantic salmon, king salmon (Chinook), the red salmon (Sockeye), the silver salmon (Coho), the chum salmon (Keta) and the humpback or pink salmon. Many of the salmon, such as the red salmon or pink salmon are so called for the colour of their flesh. This colour is caused by carotenoid pigments in salmon flesh, which are present in salmon due to their diet of krill and shellfish. Salmon are a carnivorous fish, and young salmon feed on insects and crustaceans while older ones feed on other smaller fishes.

Salmon is used in a variety of recipes such as salmon fillets, salmon marinade, sashimi and salmon steak. There are many popular methods of salmon preparation which include baking, poaching, grilling and barbecuing. Canned or smoked salmon is also popular. Salmon besides being a popular food fish, is also a game fish favored by many recreational anglers, because certain salmon species can grow to a large size besides offering a good fight and being delicious to eat.

The diminishing numbers of salmon in the wild combined with its rising demand has necessitated alternate sources of salmon apart from wild catch. Therefore salmon are also widely raised in salmon fish farms. Salmon farming provides consumers with salmon throughout the year and at lower prices compared to wild salmon. Salmon farming is a big industry in countries like Canada, Chile, Scotland and Norway, and farm raised salmon form a substantial part of the seafood diet in Europe and North America.
